Celebrity Chef Seamus O’Connell, star of the RTE’s SOUL FOOD cookery programme, has been serving the highest quality food and wine, with hints of mischief and twists of the unexpected, at the Ivory Tower restaurant for over 16 years
Seamus’ influence include Japanese Cuisine, Mexican Soul Food, and French Haute Cusine, while the menu also features almost-forgotten Irish dishes as well as European fare.
Ingredients are extremely fresh (and often organic), flavours are bold and presentation is unusual. So whether you choose a classic dish with a twist or one of Seamus’ fusion creations, be prepared for humour and originality on a plate.
The Ivory Tower is well-known for its sushi and Japanese food and for its 5-course fine dining menu. It is also one of the only restaurants in Ireland to offer a menu based exclusively on traditional Irish food.
Seamus O’Connell was raised in Arizona and began his culinary apprenticeship under acclaimed French fusion pioneer Vincent Guerithault (Vincent’s on Camelback, Scottsdale, Az.) and ‘New American’ chef Christopher Gross (Christopher’s, Phoenix, Az).
A move to New York in the early eighties saw him working in the dynamic kitchens of 24 Fifth under Michel Fitoussi, La Reserve with Andre Gailliard, La Tucano under Jaques Maxime, and the newly opened Le Bernardin. Seamus then moved to Ireland for the first time, and spent some time sculpting in the west of Ireland. Following this, Seamus moved to France where he worked under Alain Chapel in Mionnay and at La Tour Rose in Lyon with Phillipe Chavent – both 3 *** Michelin restaurants.
